Well, the one time I played the deck my typical turn was bleeding for 1 at zero stealth and discarding a potence card at the end of the turn.
I guess a weenie combat deck would be what I'm going for. I realize that's a bit of an oxymoron, but the deck I'm going for is supposed to showcase Jozz.

Not at all. Weenie Potence rush and weenie Animalism rush are tournament staples.
The problem with your core idea is that Jozz isn't a showcase vampire. He's got an extremely conditional rush and no combat disciplines. He'd probably do fine in a disciplineless weenie rush deck in which his special might occassionally be useful, rather than being something you rely on as the engine which runs your deck.
